Poongar Rice Kheer

An Indian rice pudding made with rice, milk & sugar.


INGREDIENTS :

Poongar rice – 1 small Cup

Jaggery or Nattu Chakra – ½  cup

Ghee

Cashews

Dry Coconut (Copra)

Coconut milk

METHOD OF COOKING :

  1. Grind the Poongar rice to big kurunai.
  2. Cook the kurunai in pressure cooker for 6 whistles.
  3. Heat a Pan and add ghee and cooked rice add little water and cook for 5 mts.
  4. In a Pan add jaggery or nattu chakra and little water and boil until it becomes a syrup. Add rice to this syrup and cook for 15 mts.
  5. Add little ghee, coconut milk.
  6. Finally temper with cashew nuts and coconut bits.

INGREDIENTS :

Kuzhi Adichan Aval – 1 Cup

Nattu Chakra – 3/4 cup

Cardamom – 4

Ghee

Cashew

Almonds


METHOD OF COOKING :

  1. Roast the aval with little ghee
  2. Grind it coarsely
  3. In a Pan, add ¼ cup of water and nattu chakra to make a syrup and let it boil for 5 mts.
  4. Add the roasted aval powder and stir it nicely.
  5. Add ghee in between.
  6. Cook for 10 mts in low heat add cardamom
  7. Temper cashew /Almonds in ghee and add to the aval kesari.
  8. Serve
